OK, the dough has finished rising for 1-1/2 hours. Is your kitchen clean? Hope so... The dough should have doubled in size.
...It's just so beautiful!!!! There is sits, ready to be punched! ;-)

Punch the dough down. Give it a good shot! After you have punched it once, you will see it drop and get much smaller. Now punch it some more, press it, punch it. You want to work all the air out of it.
I just had to take a picture of this. On this particular day I was baking it was gorgeous outside! Nice 50 degree F weather, a nice breeze. Later on I opened the windows to cool off the house. What a lovely day it was! Not shown here is me working this dough back into a ball again and then back in the bowl and then back in the oven to rise for 1 more hour.

OK, here is the dough again after rising for another hour in the same fashion as the first rise.
 
Oh Man! Beautiful! Look at that! It brings tears of joy seeing this wonderful dough. You will notice the windows are open now, really an amazing day! Nice cool 50 degree F air flowing through the house now.

OK, now you are ready to shape your two loaves. With a scraper or spatchula, slowly pull the dough away from the side of the bowl as you pour the dough out onto a floured bread board or counter. At this point you will have some flour and corn meal on the board.
No after the dough has risen twice it is now a much stronger dough and is read to form into loaves!

Work with the dough a little bit to get it smooth again.
Cut your dough ball in half..

Form each dough ball into tight balls using the same method as before pushing the down down and up to the bottom center turning as you go.
Now you have two dough balls that will be your two loaves of bread.

Now grease two cookie sheets. I used spray oil. Just sprayed the pan and the wiped it down with a paper towel so it's covered evenly. I also use double wall baking pans that help prevent the bottom of the bread from burning.
OK, now we have two dough balls on their own cookie sheets ready to go.
