Anthony's Fettuccine Alfredo Recipe Photos with Commentary Part 1

I have placed some explanatory photos below that, hopefully, will help you along in your Italian culinary adventure. Sometimes a picture and a few tips really helps!... ;-) These are the details I feel are always missing in your average recipe book or recipe website.

Making the Alfredo Sauce

OK, off we go. Butter, about 6 Tbs. of it. Please use real butter for this recipe, it's a must! Also, notice that I use unsalted butter. THis is because you will be getting plenty of saltiness from the parmesan cheese..
Here you can see two boxes of fettuccine noodles but I only use 1-1/2 boxes. I do add a little bit of salt to the water for boiling.
Cream! Use whole cream or heavy cream! This can also be called whipping cream. This help you get a nice thick and creamy Alfredo sauce..
Don't let the beer throw you off here. That was just for drinking while cooking :-) That is Smithwick's A very good Irish brew. I am half Italian, half Irish, so I do like a good Irish ale. Here we can see I have the water getting ready for the Fettuccine noodles and I have my cream ready to go in the pan.
With the pan on low heat, pour in 1 cup of cream. You want to slowly cook this Alfredo sauce. Take your time. No rush here.
This is my friend Frank. I put him to work on chopping up some fresh parsley.
After you have warmed up the cream, go ahead and add the butter. Keep stirring as the butter completely melts and blends in with the cream...
This is a good time to start cooking your noodles. The noodles are going to take about 10 minutes or so to cook and that is about the same time it's going to take to make the Alfredo sauce. What you don't see here is the addition of parmesan cheese. I added 1 cup of parmesan and spent a lot of time stirring while the cheese melted and blend in with the sauce..
Keep stirring. You may want to turn the heat up a bit to be sure the cheese melts completely. Do not boil. You can get a few rolling bubbles for a short while but be carefully to not let it boil. I also like to add fresh ground pepper into the sauce at this point. If you want a little kick you could add crushed red pepper as well.
I'm not really sure what Frank is doing here. Whatever it was, he was being theatrical :-)
I have Frank doing the final stirring of the Alfredo sauce here. The timing on this is very important. You never want to serve cold Fettuccine Alfredo. So time everything out to where your table is all set and anything else you are having with the meal is ready. You want to serve this dish immediately after it's ready..
After you have drained your Fettuccine noodles and placed them into a nice large bowl, add a bit more parmesan cheese and some fresh ground pepper...
Add some fresh chopped parsley. Use a lot of parsley for this!
Add a bit more parmesan and now your ready to pour in the Alfredo sauce and start mixing it all up.

Pour in the Alfredo sauce. You need to do all of this quickly so everything stays nice and hot.
...keep pouring...
Stir the past while you pour in the Alfredo sauce.
Now you are ready to mix it all up..
...Keep mixing, stirring, tossing the noodles like a salad.
You want to make sure there is not one spot on a noodles that does not have creamy Alfredo sauce on it.
...Add a little more parsley and parmesan cheese and stir some more.
Just about done. Final stirring and tasting...
This was a guys night. Our wives where up in the North Carolina mountains so it was just father and sons so we did not bother cleaning up and you don't see any vegetables here either. Well, I do have parsley in the Fettuccine and Chicken Cutlets :-) The house was a mess, usually when I take photos for a recipe my wife makes sure I have everything clean an neat for the photos.

Here is a nice blow up of the Fettuccine. As you can see here, I don't like the Fettuccine noodles swimming in Alfredo sauce. Just enough to cover the noodles nice is sufficient.
...And here is a beautiful plate of Chicken Cutlets I made earlier and had them warm in the oven to serve with the Fettuccine as soon as it was ready.
...And here we have some nice garlic bread. I must to have with this meal. It's wonderful to scrape the bowl with this garlic bread getting every bit of the leftover Alfredo sauce on the bread. YUM!!!.
Here is the final dish ready to eat. I like to have a bowl of fresh parmesan with a spoon to add to the Alfredo for just a little more cheesiness! Oh wait! Someone pass me the garlic bread!

Enjoying the Fettuccine with Chicken Cutlets. My favorite combo!

Time to dig in an enjoy! The orange cool aid seemed to go very good with the meal. A perfect vintage.
A standard that I learned growing up with my grandma's cooking is you always make too much food. The absolute worst thing that can happen is you run out of food before everyone is full. Besides, this all makes great leftovers.
This is a delicious meal, trust me!
Ah, there we go! Now I have the garlic bread and can dig in! Mangia!
