This is a tasty treat my son came up with one evening when we were wondering what to do with leftover pasta :-). |

How to make the Daniel's Parsley and Pasta Fritters Recipe:
Stuff you will need to make the Parsley and Pasta Fritters:
- Leftover spaghetti that had Alfredo Sauce on it that was topped with lots of parmesan cheese. You have to match this closely to get the same results we did.
(I will have a recipe for Alfredo sauce up on the site soon)
- Fresh chopped parsley.
- Bread Crumbs
(I recommend Progresso Italian Style)
- (3) Eggs
- Olive Oil
- Salt and Pepper

OK, are you ready? Here we go....
Read on for Daniel's Parsley and Pasta Fritter Recipe instructions..
First...
On the right here you can see my younger son Daniel. He has his parsley and he's ready to go! :-) The most important part of this recipe is have leftovers to work with. So the first step really is to have some spaghetti with an Alfredo Sauce over it but don't eat it all. Make sure you have leftovers, you will need this to be the filling for your Parsley and Pasta Fritters.

Get a bowl and fill it up with some bread crumbs. Add some salt and fresh ground pepper. Also, get a bowl and add three eggs to it and mix it up good with a fork like your making scrambled eggs.

Take about a table spoon size portion of the leftover spaghetti with Alfredo sauce and some fresh parsley (not chopped, just some small pieces) and squeeze it together in a ball, well, kind of a flat ball. Then take this clump of stuff and dip it into the eggs. This is going to get messy but that's ok. Don't let the pasta and parsley fall apart. (Well, you'll have to look closely at the photo. What your doing is actually rolling the spaghetti around a piece of parsley, but you can be creative with this.)

Add some nice extra virgin olive oil to a frying pan covering the bottom about 1/4". Get the pan nice and had. Heat the oil with medium to medium high heat. When the oil is hot enough, gently place your fritter in the oil and fry on one side for about 1-2 minutes then flip and fry for about 1 more minute. The timing on this will very. What your shooting for is a nice golden brown.

When you take the out of the frying pan you are going to want to drain them. Place them on a paper towel that is sitting on a paper plate and then place a paper towel on top of that. Pat the top with a paper towel to remove as move oil as you can. Sprinkle a little salt on these while they are still a little most. let the cool and then enjoy!
You can see here on the left a blowup of this yummy treat! These things really are quite tasty and fun to make ....I highly recommend making these with your children... and be creative, add all kinds of stuff to this and see how it tastes! A great experiment. Careful, they might want to try adding gum ;-)
