I have placed some explanatory photos below that, hopefully, will help you along in your Italian culinary adventure. Sometimes a picture and a few tips really helps!... ;-) These are the details I feel are always missing in your average recipe book or recipe website.

Making the Chicken Cutlets. Step by step photos Part 1
Breading the chicken cutlets.

Here is the stuff you will need. Missing in this photo is a splash of milk for the egg mix. The fresh parsley is very important!
Here we have the chicken cutlets after they have been washed. Aren't they pretty?
You then want to trim away some of the fat and grissle/vein stuff, not sure what that stuff is, but trim it off anyway :-)
Ok, now you get a meat pounder and pound that chicken!!! This is a good thing to get your kids (if you have kids that is) involved with, they love pounding stuff ;-)
Here is the chicken all pounded out nice and tender and ready to go. Make sure you pound both sides. Oh and look, that's a shadow of my head too ;-)
You will want to take the Ritz cracker and put them into a large freezer bad and then get a heavy rolling ping and smash up the crackers into little bits, not too small, you don't want powder, well, you want some powder, but mostly chunks.
Here we have the chicken cutlet assembly line all ready to rock 'n roll! Chicken, clean plate to place the breaded chicken on, flour, egg mix and smashed up crackers..
Dip the chicken into the flour, get it covered well, then dip into egg, again, cover it well, then dip it into the crackers, then place it onto the clean plate.
Put enough olive oil into the pan to cover the then entire bottom about 1/8 deep. Not too much, you don't want the cutlets swimming in the oil, it would only cover the bottom of the cutlet when cooking.
Again, Flour, egg, crackers then onto the plate. Repeat. Again, Flour, egg, crackers then onto the plate. Everybody sing along! Flour, egg, crackers then onto the plate. :-)
Here we have the assembly line in action!.
All breaded and ready for cooking :-) Click the link below to see more...

Making the Chicken Cutlets. Step by step photos Part 2
Frying the chicken cutlets.

So now we have all the chicken cutlets breaded and ready for cooking and hot olive oil in the pan. And awaaay we go!!!
Make sure the oil is nice and hot before you place the cutlets into the oil. Remember, you don't want the chicken to bath in the oil, just briefly cook in it so it gets nice and golden brown on each side. The chicken is going to cook fast because it's thin and you pounded it out.
Ok, your oil is nice and hot, now you place the breaded cutlets into the oil and cook until golden brown. While cooking, you will want to add some fresh ground pepper and some fresh parsley. Fresh parsley, Kapish? FRESH! Very important!.
See how nice and golden brown these are? You want to flip them when they have this color. Then you cook them on the other side for about the same amount of time. You want the other side to look like this as well.
You will want to get a paper grocery bag with paper towels on top of that. Take the cutlets out of the pan with a fork, let the cutlet drip dry over the pan a bit before you place them on the paper towel to dry.
You then want to place some paper towels on top and press, this will help get rid of extra grease and oil.
Then you cook some more and do it all over again. You might have to change out the oil in the middle of the process. Your making a whole bunch of cutlets here, so about midway through your oil is going to get full of over cooked crumbs. When you change out the oil, be sure to wait and let the oil get hot again.
There they are, all finished and ready to eat! YUM!!! Just beautiful! You did it! A job well done. You gonna love these, trust me! My favorite thing to have on the side with this is Fettucini Alfredo. It goes really well with the cutlets. OH! That reminds me! I'm going to have to add a recipe for Fettucini Alfredo to this site. Ok, note to self; work on getting the Fettucini Alfredo recipe written out and on the site, have camera ready! Got it! :-)
